Classes


Take a class and you'll bring home a part of Alaska you can share with family and friends for years to come.  For 3 hours while you are in Juneau, we can teach you to prepare Alaskan foods the Alaskan way.  Classes may cover salmon, halibut, crab, scallops, oysters, shrimp, and occasionally other delicacies such as sea cucumber, octopus, squid, or abalone.  Men’s specialties such as canning, smoking, and grilling may also be featured.

Each cooking instructor will teach their own unique dish, so the courses cover a wide variety of different foods from all over Alaska.

NOTICE >>>>   This is a 3 hour class  on Fruday, October 23.  Antonio was a chef at the Baranof and just returned from Peru.The menu will be :

Anticuchos de Mar y Montaña (Sea and Mountain Skewers with sauteed
portabella mushrooms)  - Yuca Rellena con Huancaina 
(Stuffed Yucca Root with Yellow hot pepper sauce)
  - Tiradito de Pejerrey a las Dos Cremas
 (Smelts Sashimi Style Cebiche topped with two pepper cream sauces)  -
 Ravioles de Cabrito en salsa de Seco 
(Lamb stuffed Ravioli with a Cilantro based sauce). 

Special Notes

Antonio Diaz became interested in the culinary arts growing up in Lima, Peru, 
where his parents taught him about the dishes of their native regions.
 His first formal training occurred in Lyons, France, where he spent a year 
working in a Cuban/French restaurant. Back in Peru, he continued his
 training with a catering business in Lima. After moving to Juneau in 2002, 
Antonio spent several years cooking at the Baranof Hotel. 
During this time he also organized a series of Peruvian dinners 
at the Back Room at the Silverbow; catered several special events
 including a Peruvian dinner for 200 for St. Paul's Church; and ran a 
Peruvian food booth at the Public Market.
 Antonio currently returned from spending a year with his family back in
 Lima, where he took cooking classes and every 
opportunity to sample the varied and delicious cuisine of his home
 country. He is excited to share it with all of you!
